A Family and A Food Truck
I am a recent Rowan University graduate inspired by entrepreneurial parents to start a business, a food truck called, Red's Rolling Restaurant. Mary Hilbert, the owner of Mary's Mobile Diner and also my mom, has served customers for 12 years and counting, allowing me throughout my childhood , to tag along and learn the trade. My father, owner of J. D. Hilbert Construction, and my brother have been my own personal mechanics throughout this journey, up for any challenge thrown at them. My parents have embedded the importance of hard work, leadership, and the qualities it takes to be an entrepreneur. Without the support of my amazing family I would not have been able to get my truck rolling.

Red's Rolling Restaurant is designed to resemble an outdoor café with a modern flair. Flatbreads, paninis, fresh salads, and soups are key items on the menu, with breakfast options as well. Vegetarian and gluten free items are always available. Call for more information regarding a catering menu and availability!
